Finnish pancakes a la liw: 0.5 liter flour (no raising agent; wheat, rye, buckwheat all work) about 5 eggs 1 liter milk 0.5 dl oil butter large bowl whisk ladle spatula fying pan hob in large bowl break eggs, yolks with whisk add most of the milk add some flour, stir into milk with whisk, repeat until all flour is used add oil let it be in room temp for an hour or more stir pccasonally after the hour, if batter is too thin, add flour, if too thick, add milk; this needs some experience to get it right heat pan, quite hot (hot enough to melt the one ring) add about 1 tbsp butter when completely melted, pour enough batter to cover pan, but not too thickly fry until topside is congealed, flip after bottom is a good colour, serve optional: with bacon: add strip of bacon to pan before batter serve with toppings according to taste: sugar, jam, whipped cream, or anything really these are not healthfood
